Bresaola
Ingredients
- 2.5 kg topside silver side
- 700ml post party red wine
- 840ml white wine
- 425gm coarse salt
- 1 bunch rosemary
- 12 bay leaf
- 1 bunch thyme
- 3 clove garlic
- 4 strips orange peel
- 12 chillies
- 60g honey
Method
Bring wine to blood temp then add salt and spices add trimmed beef.
Marinate for seven days moving meat daily then drain.
Bind and hang for 7 days.
