Central Otago Cherry Salad
Central Otago Cherry Salad.
Fresh Central Otago cherries are the perfect counterpoint to peppery rocket and sharp cheese in this zesty salad.

Ingredients
- 2 cups fresh Central Otago cherries, pitted
- 1 large red onion, peeled, cut into wide wedges
- 100g baby rocket
- 60g parmesan, shaved
- 2/3 cup red wine vinegar
- 1/3 cup caster sugar
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 2 tbsp honey
- 1 tbsp fresh thyme, finely chopped
Method
- Combine onion, red wine vinegar and sugar in a small saucepan and bring to the boil. Reduce heat and simmer until onion is pink. Remove and set aside until room temperature.
- To make vinaigrette, whisk oil, white wine vinegar, honey and thyme until combined. Season to taste with salt and pepper.
- Assemble rocket leaves. Sprinkle with pitted cherries. Spoon over onion wedges.
- Drizzle with vinaigrette and toss salad. Top with shaved parmesan. Season to taste and drizzle with more olive oil.
