Compote of Rhubarb
Ingredients
- 500g of rhubarb
- Juice of an orange
- Several strips of orange rind (removed with a vegetable peeler)
- ¾ cup sugar
Method
Wash the rhubarb and cut into pieces about 4 cms long. Place in a double boiler. Add the orange juice, strips of orange rind and sugar.
Cook over boiling water until tender and then leave to cool.
