I'm not having a great relationship with bread anymore, so I've had to re-think breakfast. Bought muesli is either really high in sugar or really expensive (or both), but I found this recipe on the Harraways Oats packet, improvised a bit and haven't looked back. It's refined sugar free (apart from the dried fruit) and keeps any 'hangryness' at bay for hours. Also nice to grab a handful as a snack in the afternoon slump. I make a batch of this up on a weekend and it does me for a whole week.

Ingredients

400g rolled oats.
100g mixed nuts.
75g pumpkin seeds and linseeds.
40g desiccated coconut.
150ml water
100ml oil (I use Canola oil).
Diced dried apple, sultanas (optional).

Method

Heat oven to 200C. Line a baking dish with baking paper and spread dry ingredients on it (except dried fruit). Stir in the water and oil. Bake for 30-40mins - depending on the heat strength of your oven. Stir occasionally and check frequently (burnt muesli is not pleasant). When golden brown and crunchy, take it out and add dried fruit. Store in an airtight container. I usually serve it with some flaxseed oil or almond milk.
