El Speciale Sauce
Ingredients
Green Salsa
- 3 green chillies, halved and deseeded
- 1 tomato, roughly chopped
- 2 cloves garlic, peeled and roughly chopped
- pinch salt
- 7 canned tomatillos, drained and chopped
- ½ cup coriander leaves
Red Salsa
- 4 tomatoes, skinned, deseeded and finely chopped
- ½ onion, finely sliced
- 2 cloves garlic, peeled
- 10 red chillies, halved and deseeded
- pinch salt
To serve
- 1 diced avocado
Method
Green Salsa
Blend together chillies, tomato, garlic and salt in a food processor. Add tomatillos and coriander and pulse.
Red Salsa
Heat a heavy-based frying pan. Cook tomatoes, onion and garlic until just coloured. Transfer to a food processor. Lightly brown chillies in the same pan and add to the food processor with salt. Blend ingredients together.

Mix green and red salsa together, then gently fold in avocado.
