Gazpacho
Ingredients
- 2 cups or 500 mls tomato juice
- 3 tomatoes, peeled, de-seeded and finely diced
- ½ cup or 125 mls Sauvignon Blanc
- 1 teaspoon sugar
- Salt and pepper, to taste
- Tabasco sauce, depends how spicy you like it
- 1 avocado, finely diced
- 1 telegraph cucumber, peeled, de-seeded and finely diced
- 1 red capsicum, diced
- 1 stick celery, diced
- 4 spring onions, chopped
Method
Combine first six ingredients into a bowl of a food processor, and whiz till smooth, strain through a fine sieve.
Add the diced vegetables and correct seasoning.
Chill until ready to serve.
