Gluten Free Yorkshire Muffins from Ilex Cafe
Ingredients
- 450g tapioca flour
- 4 tsp baking powder
- 1 tsp salt
- 8 eggs
- 430 ml milk
- 3 cups tasty cheese
- 1 heaped cup of spring onion
- diced feta and kalamata olives to taste
Method
Mix dry ingredients
Add eggs and milk
Add cheese and spring onion
Spray muffin parchment papers
Add mix to 12 muffin moulds
Add 60gm mix to each muffin mould
Add feta and olive and top with tasty cheese
Bake at 178C for 30 minutes
