Healthy Banoffee Pie
Makes 10 serves
Ingredients
Base
- 1 cup almonds, raw
- 1 cup dates, dried
- 1 cup cashew nuts, raw
- 0.5 cup boiling water
Filling
- 2 cups dates, dried
- 0.5 cup peanut butter
- 1.5 cups hot water
Topping
- 3 bananas, sliced
- 1 cup cashew nuts, raw
- 0.5 cup water
- garnish: 1 tablespoon carob powder
Method
Put the base ingredients in a food processor and process until it is clumping.
Tip into a round 25 cm (8 inch) pie dish and press down and around the sides.
Combine the filling ingredients into the food processor (no cleaning required) and process until smooth.
Carefully spoon into the pie.
Slice the bananas and layer on the filling.
Clean the food processor and put the cashews and water in and process until you have a fine cream. Spoon this on top.
Sprinkle some carob powder on top.
Freeze everything for one hour to firm up.
Serve.
