Marinated Tomato Salad

It’s hard to beat this salad, made from ripe, red tomatoes from your own garden!

(for 4 servings)

Ingredients

  • 5 - 6 tomatoes
  • 1 tsp sugar
  • ¼ - ½ tsp salt
  • black pepper to taste
  • few drops Tabasco sauce
  • 2 – 3 tsp wine vinegar
  • 1 Tbsp chopped basil
  • 1 – 2 Tbsp olive or canola oil (optional)

Method

Slice, quarter or cube the tomatoes into a serving dish.

About 10 – 15 minutes before serving, sprinkle the remaining ingredients, in the order given, over the tomatoes. Toss lightly and leave to stand at room temperature.

Note: Replace basil with fresh coriander leaves or parsley.
