Mascarpone
Ingredients
- 300 g tofu
- 1 tablespoon cider vinegar
- 2 tablespoons lemon juice
- One-third cup of icing sugar
- 1 and a half teaspoons of xanthan gum
- 1 tablespoon vanilla paste (or one and a half teaspoons vanilla extract)
- 1 and a half teaspoons of flaky sea salt
- 6 tablespoons melted coconut oil
Method
Add all ingredients to a blender and blend until very smooth.
Chill overnight, mix again thoroughly and serve
