Mixed Grain Bread (gluten free)
Ingredients
- 7gms yeast
- 250ml water
- 300gms buckwheat flour
- 130gms quinoa flour
- 130gms potato flour
- 2 tsp salt
- 2 tsp brown sugar
- 2 Tbs whole quinoa
- 1 Tbs linseed
- 3 Tbs cornflour
- 1 tsp fennel seeds
Method
Combine all ingredients, leave to rest for 30 minutes. Check consistency of batter - it should be the same as a cake batter adjust as necessary. Pour into oiled tin 20cm long by 10 cm wide, and leave to rise by 1/2 again. Then bake in a preheated oven at 200°C for 10 minutes, then lower the temperature to 170°C and cook for a further 45 minutes.
