Mussel Fritters
Ingredients
- 2 cups self raising flour + add one teaspoon of baking powder
- 1 cup mascarpone
- I tablespoon parsley
- salt and pepper
- zest of one lemon
- juice of 1 and a half lemons
- 1 cup of pale ale
- half cup of milk
- 1 diced onion (sweated off in 1 tablespoon of butter)
- 1 kilo of steamed mussels – take out of the shell and chop half of the mussels and put the other half in a food processor to chop up finer
- 150g smoked chopped mussels
- 1 tablespoon of chopped capers
- 2 eggs
- 1 handful of chopped spring onions
- 2 tablespoons of malt vinegar
- 1 tablespoon sweet chilli sauce
- 100g grated parmesan cheese
Method
Mix all dry ingredients with all wet ingredients
Pan fry in oil – they take a while to cook. Flip them over
Finish in a hot oven.
