New Zealand Quinoa Co. – Apple, Bran and Quinoa Muffins
1 cup flour
1 cup bran
1 teaspoon baking soda
2 teaspoons baking powder
1/2 cup sugar
1/2 cup sultanas (or chocolate chips)
Pinch of salt
2 tablespoons golden syrup
1 grated apple (or 1 cup of any type of fruit)
1/2 cup cooked quinoa
1 cup milk
1 egg
Mix all dry food ingredients. Add apple, quinoa (can be added hot or cold), golden syrup, egg and milk - mixture should be quite wet. Spoon into greased muffin tins. Bake at 190 for 15mins.
