Pork & Chestnut stuffing
This stuffing is seriously good! It will suffice for a 3.5 - 4.5 kg turkey. Glynn’s recipe says to use your hands to slip it evenly between the skin and breast, however, we tend to use it to stuff the cavity and put more pancetta under the skin instead.
Ingredients
2 x 420g packets L'Authentique pork & fennel sausages (casings removed)
200g Pedrazzoli pancetta, chopped or minced coarsely
1 Tbsp fresh thyme, chopped
1 tsp Spice Trader ground cinnamon
½ tsp Spice Trader ground nutmeg
¼ tsp Spice Trader ground cloves
1 Tbsp finely chopped onion
1 tsp Anana salt
50g El Corazon quince paste
200g Naiciña pre-cooked organic chestnuts (chopped in large pieces) - added last
