Rack of Lamb Chermoula

Ingredients

Grilled Lamb Racks

  • 2 racks of lamb
  • 3 cloves garlic
  • 1 tbsp brown sugar
  • 1 small onion diced
  • ¼ cup finely chopped coriander
  • 1/3 cup finely chopped parsley
  • 1 tbsp paprika
  • ½ tsp chopped fresh chili
  • ½ tsp cumin
  • 6 tbsp olive oil
  • zest and juice of one lemon
  • Salt and pepper to taste.

Method

Mix all the ingredients to a paste in a food processor or use blending stick.

Rub over the lamb racks.

Grill indirect at 180-190°C for 25 minutes for medium rare. Let the lamb rest for a few minutes before serving.
