Red Salsa
Ingredients
- 2 or 3 tomatoes (whole)
- Half a capsicum (cut in lengths)
- 2 cloves of garlic (whole)
- 1/4 red onion (whole)
- 1 lime or lemon (squeezed)
- Handful of coriander (to garnish)
- Salt and Pepper
Method
Throw the first four ingredients in a pan and cook on high heat, turning until charred.
Transfer ingredients from heat into a bowl and use a hand blender to combine. Add the remaining ingredients.
