Red Salsa

Ingredients

  • 2 or 3 tomatoes (whole)
  • Half a capsicum (cut in lengths)
  • 2 cloves of garlic (whole)
  • 1/4 red onion (whole)
  • 1 lime or lemon (squeezed)
  • Handful of coriander (to garnish)
  • Salt and Pepper

Method

Throw the first four ingredients in a pan and cook on high heat, turning until charred.

Transfer ingredients from heat into a bowl and use a hand blender to combine. Add the remaining ingredients.
