Roast Rack of Lamb
Preparation time: 10-15 minutes / Cooking time: 15-20 minutes / Serves: 4-6
Ingredients
- 2 lamb racks, well-trimmed
- oil
- salt and pepper
- chopped fresh rosemary or garlic
Method
Rub the lamb racks with oil. Season well with salt and pepper.
Preheat the oven to 200°C and place the oven rack just above the centre.
Cover and allow to sit for about 10-15 minutes. This allows time for the lamb to come to room temperature.
Heat a frying pan and when very hot brown the lamb racks on the meaty side as well as possible. Transfer to a roasting tray and sprinkle with the rosemary of garlic if wished.
Roast in the preheated oven for 15 minutes. Remove, cover and set aside to rest for 10 minutes before carving into cutlet-style portions. This will cook the lamb to medium/rare, for medium/well-done, cook a further 5 minutes.
Cook's tips:
Look for lamb racks that are well-trimmed- this way they are lean and cook quickly.
Lamb racks are purchased with 6-8 racks.
