Salsify Fritters
(Serves 6)
Ingredients
Batter
- 125g flour
- 1 teaspoon baking powder
- 1 egg
- 1Tbsp olive oil
- aprox 150ml water
- 1 dessert spoon ouzo/pernod (optional)
- 1 pinch of dried oregano
Fritters
- 6 salisfy
- vegetable oil for frying
Method
Batter
Beat the ingredients together in the order given, adding extra water if necessary.
Fritters
Cook and peel the salsify, then cut into 6 pieces.
Dip salsify into the fritter batter and deep fry in 1 cm depth of vegetable oil
Serve with lemon.
