Smoked Chicken Salad with Sun-Dried Tomatoes, Olives and Feta
Ingredients
- 1 smoked chicken breast
- half cup sundried tomatoes
- 1 cup blanched almonds
- 250g feta cheese
- 2 cups mesclun salad mix
- half cup black kalamata olives
- 3-4 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- flaky sea salt and freshly ground black pepper
- half cup parsley, chopped
Method
Thinly slice the smoked chicken breast.
Slice sundried tomatoes in quarters.
Dry-roast the almonds at 180°C, until starting to colour. Cool.
Dice the cheese into cubes.
In a large flat serving dish, layer all the salad ingredients.
Combine the oil and vinegar.
Drizzle over the salad and toss lightly.
Season and sprinkle with parsley.
