Sri Lankan Rolls
Ingredients:
The Filling:
Serving 20 pieces
- 1 kg potato
500gms onion - 1tsp fennel seed
- 1tsp mustard seed
- Salt to taste
- 100gm leeks
- 100gms carrot
- 1tsp Curry powder
- ¼ tsp turmeric powder
- ½ tsp garam masala
- 3 tbsp vegetable oil
- For frying
- 1 litre 500 ml vegetable oil
- For making rolls:
- 500gms bread crumbs
- 2 cups white flour
- 20 Rolls sheet
Method
Fillings:
- Prior to making your filling boil your potatoes and cut into pieces.
- Heat the pan and pour the oil, when the oil is hot add mustard seed when it is bursting, add onion and fennel seed, curry leaves. Stir it till it become gold colour then add carrot and leeks and cook for 3 minutes.
- Add the potato, salt and curry powder into the mix. Stir for 5 minutes and leave it to cool down.
To make the roll
- Mix the white flour in the water like a semi liquid in one bowl.
- Place the roll sheet in the table and put the fillings inside and then roll it like a spring roll.
- Dip the roll in the flour mix and then roll it in the bread crumbs.
- Again heat the pan and pour the oil, when the oil is hot fry the rolls in the oil till it become brown.
Ingredients:
250gms tomato
250gms onion
Salt to taste
Curry leaves
1 tsp mustard seed
2 tbsp vegetable oil
2 red chilli
3 cloves garlic
1 tsp cumin seed
Directions:
- Heat the oil in the pan and add mustard seed once it starts to pop add onion, curry leave and cumin seed.
- When the onion turns brown add the tomato, garlic, salt and stir for 5 minutes.

Cool down the mix and then blend in the grinder.
