Sweet Potato Fries
Make 6 x one-cup servings
Ingredients
- 1.5 kg (3lbs) large red sweet potato (kumara) (around 3 large)
- 2 tablespoons oil
- 1 teaspoon salt
- garnish: parsley
Method
Slice the sweet potato into 1cm round discs. Then slice into chip shapes. There is no need to peel off the skin.
In a mixing bowl, carefully mix the chips with the oil, so they are evenly covered.
In an oven tray, put some baking paper (for easy cleanup). Pour the chips on and arrange so they are evenly spaced.
Bake for 20-30 minutes at 180°C (350°F) or until just golden. Mix gently every 10 minutes to encourage even cooking.
Sprinkle the salt over the fries. Serve with some hummus and tomato sauce (ketchup) and garnish with some finely chopped parsley.
- You can use orange or gold sweet potato, which are even sweeter, however these fries will not hold together as well and you will have to be extra careful.
- Many ovens are inaccurate with their temperatures. For a nice golden chip, you need a high temperature and ideally a fan bake.
