Tomato Water
Ingredients
- tomatoes
- salt
- cayenne Pepper
Method
Take as many ripe tomatoes as you can collect.
Season generously with salt.
Purée in a food process in batches.
Transfer to a muslin lined strainer or coffee filter.
Allow to drip through slowly and the resulting water will run clear.
Do not refrigerate at this stage.
Watch a movie.
Get eight hours sleep.
Taste your tomato consommé/water. Adjust seasoning with a little salt and cayenne.
