Whitebait Fritters
Ingredients
- 250g whitebait
- 2 eggs
- 1 level tablespoon flour
- salt and pepper
- zest of half a lemon
Method
Whisk one egg white with a small pinch of salt. In a bowl add one whole egg plus one egg yolk, zest, pinch of salt and pepper and flour – whisk to form a batter. Fold in whitebait. Just before frying the fritters, fold in the whisked egg white to make it nice and light.
