Zucchini Salad

Serves 4

Ingredients 

  • 3 smallish and very fresh zucchini
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • 1 clove garlic, peeled and crushed
  • Flaky sea salt
  • Freshly ground black pepper
  • Fresh thyme

Method

Thinly slice zucchini and transfer to a bowl. Whisk oil, lemon juice, garlic, a few good pinches of salt, a little black pepper and a few flecks of fresh thyme.

Toss and either serve immediately or let the salad sit for 30 minutes or more.
